I Need To Relax!

I've been very busy these past days. Symone's final exams ended last week. Symone and I was very busy reviewing and at the same time my son Liam was sick for four days. Summer has finally started this week. Hubby will be having his holy week vacation and I am so excited to spend more quality time with my family. I told hubby that I really need to relax a little. I wanted to have a massage but having a massage these days can be very expensive. What's For Lunch?

Hubby has been telling me to cook PININYAHANG MANOK (Pineapple Chicken) ages ago. I don't have any idea how to cook it so last night, hubby said to look for it on the net and so glad I've found it. There were so many versions of this food but I stick with the most simple and easy to follow recipe that I found at GROUP RECIPES

Here are the ingredients and the step by step procedure on how to cook it just in case you want to try it out for yourself.

Pininyahang Manok Pineapple Chicken Recipe


Ingredients
  • 1 whole chicken, cut into serving pieces
  • 1 can pineapple chunks, set aside the syrup
  • 1 Tbsp oil
  • 3 cloves garlic, minced
  • 1 medium-sized onions, chopped
  • 1/2 cup evaporated milk or coconut milk
  • patis (fish sauce), to taste

Directions
  1. Marinade the chicken with the pineapple syrup for a few minutes.
  2. Pour the chicken with the marinade in a pot, cook until the marinade evaporates and the chicken is lightly brown. (You’re not exactly frying the chicken–you just want to seal in the juices.)
  3. When done, set aside the chicken on one side of the pot.
  4. Add the oil, saute garlic and onions then mix together with the lightly browned chicken and cook for about a minute.
  5. Add the pineapple chunks then pour the evaporated milk. Cover and bring to a simmer. (If you are using coconut milk, do not cover, otherwise it will curdle).
  6. By the time the chicken is done, the sauce would be rather thick and creamy, stir then season with patis.
  7. Simmer again for 2 minutes then turn-off the heat.
Best serve with steamed rice.

Here is the Pinanyahang Manok that I cooked for lunch which made my Hubby's day.

Hubby told me that the taste was good.... hmmm... not bad for my first shot n this food.

Finally... My Own Dot Com

Finally I have my own domain. Proud Mommy just celebrated her first blogoversary last month and as my way of celebrating it I just bought my own dot com. I know that it'll be a lot of hardworks (changing my url on some sites) but I guess I'm ready in putting this blog on the next level. I'll be having a blog makeover soon also so I am so excited with these changes on my first ever blog.

Right now I have 3 blogs (including this blog). Two of my newest will be announced soon. I am still trying to put up some stuffs and I hope to finish them soon.

Happy Sunday!

My family and I just got home from our Sunday worship. We will be having lunch together here at home. Hubby and I planned to cook dinner tonight instead of dining out. My daughter Symone will be having her final exams starting tomorrow so I will be reviewing her today.I just hope she will do well with her exams.

Hubby is now calling me... we will be having lunch now.

All About Perfume

I have this passion for perfumes. Ever since I was little I love to have a cologne or perfume on my little bag. Now that I am all grown up and already a mother I tend to splurge on perfumes. I love to collect different colognes and perfumes and sometimes I forgot to wear some of them. I was cleaning my stuffs last night and found out that I still have several unopened boxes of perfumes.

My all time favorite perfume is Clinique's Happy. This was the same perfume that I used during my wedding. I love floral scents so much.

Cool Contest and a New MacBook Air

I've been hooked on the net for years now. I love surfing through different sites and I love playing online games. I've started blogging last year right after I gave birth. I am now addicted to blogging and I love meeting new friends in this blogging world. Hubby then decided to buy me a laptop for my own convenience. I can now blog wherever and whenever I want while taking care of my kids. It was just last night, while checking my email, my laptop suddenly crashed. I dont know what happened. It won't turn on again. I am so worried and told hubby to get it fixed. I miss my laptop and I hope it can still be fixed and repaired. I am now using our desktop pc and I realized how comfortable it is having a laptop. I am now looking for a new laptop with high specs and reasonable price. I am so happy that I bumped into this site. Mom is watching her favorite noontime show. She called me and told me that Francis Magalona is dead already. I was so shocked. Is this true? I searched the net and saw one blog post that it is indeed true... Francis M., 44 years old, passed away this noon.

FLU No More

"Seize the day, but never choke on the bone" A famous saying that holds true to a lot of people who manage to enjoy life to the fullest. For some, being young and "feeling" healthy would mean an "eternal" license to a healthy and worry-free living.

Little did we know that life is not about fairy tales. Yes it can be true that being young would mean a lesser chance for us to be sick but not in all circumstances.

With these that I would like to share a very classic example of a someone who manages to keep and maintain a healthy living but still is very vulnerable to being sick.

I am a 33 year old married woman who practices a clean and healthy living. As much as temptations would entice me all the time (i.e. chocolates, ice cream, grilled meats, processed meats, etc), I kept - and still am - struggling to keep my head up and focus on what's healthy (although not very tasty all the time :-). But despite of all the precautions and techniques in being healthy, I am still prone and vulnerable to a lot of "knee-bending" factors. These are factors that are nature-related, environmental-affected and unforeseen realities of life.

As a mother of two kids, I would definitely go to hell and back just to shield my children from anything which might harm them. But sometimes and due to some unavoidable circumstances and despite of all the precautions that one takes, whether we like it or not, we can still get sick. Like this one instance, actually a couple of weeks back, my two kids got sick. They had a high fever and cough. I was so worried because this was the first time that my kids got Trangkaso at the same time. I rushed them to the nearest hospital and they were diagnosed to have a Flu. This incident made me realize that it's about time that I should take action regarding Influenza. Having flu is no joke. Since times are hard nowadays and medicines are expensive, a mother like me should find ways in preventing this thing to happen to my family again. We went to my kid's pediatrician to ask about the Flu vaccine. Our doctor gave my eldest her Bakuna using VAXIGRIP. It is said that flu vaccines shots should be taken annually and upon knowing that Influenza is indeed a serious disease, my family will definitely have these vaccines against flu yearly to lessen the chances and impact of flu on us. I know that being Bakunado will be such a relief for a mother like me who wanted only the best for her family.

Raptiva... A Deadly Drug

Health is wealth. Being healthy is one's treasure. Due to so many reasons and some unavoidable circumstances, we are all prone to diseases and when we are sick we tend to take medicines.
